Hot Garlic Shrimp and Corn

Recipe

1 lb raw shrimp peeled and deveined

1 TBSP olive oil

1/2 tsp sea salt

1/2 tsp chili flakes

2 large shucked cobbs of corn

2 green onions chopped for topping

 

Garlic Basil Sauce

6 cloves garlic

2 large fresh basil leaves

2 TBSP olive oil

1/2 fresh squeezed lemon juice 

1/4 tsp sea salt

 

Directions

In a medium saucepan boil your cobbs of corn whole. Then start working on your shrimp. I buy my shrimp already peeled and deveined, but if you can't find it already prepared, it's simple to do. After they are peeled and deveined you can either take the tail off or leave them on. I leave the tail on but it doesn't make a huge difference either way. Season the shrimp with the olive oil, salt and chili flakes. Put a frying pan on medium high heat. Once the pan is hot, place the seasoned shrimp in the pan flat, flipping them periodically to create a char on each side. While the shrimp is cooking, prepare your garlic basil sauce. In a blender or food processor, add in the garlic, basil, olive oil, lemon juice and salt. Blend the ingredients until everything is a puree consistency. Set this aside for now. Once your shrimp is perfectly blackenned and the corn is ready, its time to prepare it for eating. With a serated knife, cut the corn from their cobbs into a mixing bowl. Take half of the garlic basil sauce and toss it with the corn. Use the other half and do the same with the shrimp. Place the corn on a plate and top it off with the delicious and juicy shrimp and enjoy! For an extra kick in flavor, top the dish off with chopped green onion.
