Fried Lobster Pasta
Vodka Sauce Recipe
1 TBSP olive oil
1 TBSP butter
1 shallot minced
4 cloves garlic minced
1/2 TSP chilli flakes
1 TSP dried basil flakes
1 TSP salt
2- 14 oz cans diced tomatoes (no added salt)
1/2 cup heavy cream
1/2 cup vodka
1/2 LB linguine pasta
Fried Lobster Bites
2 large lobster tails
1/4 TSP salt
1 cup flour
Directions
In a large pot boil about 4 quarts of water for the pasta noodles. While that's preparing to boil start on your vodka sauce. In a large pan heat up the olive oil and butter. Once hot add in the shallots, garlic, basil, and chili flakes. Sautè the garlic, shallots, basil, and chili flakes then add in the diced tomatoes. Add in the vodka, cream, and salt. Let that simmer until the tomatoes have completely broken down to a nice sauce. While the sauce simmers begin frying up your lobster bites. Start by taking the lobster meat out of the shell or you can ask your butcher to do it for you. Take the lobster tail and slice it down the spine of the tail. Giving you two long pieces of lobster meat. Then chop the two strips of meat into small cubes. Once chopped season with 1/4 TSP salt and in a large Ziploc bag toss in 1 cup of flour. Toss until the lobster bites are covered in flour. In a medium pan heat up about a cup of olive oil. Fry the bites for about 5 minutes until golden brown. Place the fried bites on paper towel to drain the oil. Once the pasta is boiled and the vodka sauce is done toss in your pasta to the sauce. Let all that delicious sauce season the pasta noodles. In a large serving bowl add the tossed pasta and top with fresh basil, grated Parmesan cheese and of course those little delicious fried lobster bites.
