Spicy Fried Chicken Sandwich
Recipe
1 boneless skinless chicken breast
2 TBSP rice wine vinegar
1 tsp sea salt
2 cups flour
1 loaf sourdough bread
4 slices asiago cheese
4 slices red onion
4 slices tomato
2 TBSP Mayonaise
Pepper Sauce Recipe
1/2 red jalapeno pepper
1/2 green jalapeno pepper
2 cloves garlic
2 green onions
2 TBSP olive oil
2 TBSP rice wine vinegar
2 TBSP sriracha
1/2 tsp sea salt
Directions
In a large frying pan, add three cups of vegetable oil on high heat. Take the chicken breast and fillet it into three pieces with a serrated knife. Lay the fillets on a platter and season them with the vinegar and salt. In a large Ziploc bag add in 2 cups of flour and fillet of chicken. Toss until the chicken is fully covered in flour. Repeat with the other fillets. Once your oil is hot, carefully add the chicken one fillet at a time. While the chicken is frying, start on your pepper sauce. In a blender/food processor, add your jalapenos, garlic, green onions, olive oil, vinegar, sriracha and salt. Blend into a puree and set aside. Once the chicken is done frying, plate them on top of a paper towel to let the excess oil drain. While that is happening, start putting your sandwich together. First, cut open the loaf of sourdough bread. Spread the mayo on both sides of the bread, then place your slices of asiago cheese on top. To give the bread a little crunch, bake it with the mayo and cheese in the oven on 350 degrees for 3-5 minutes. Once the bread is done, add the chicken, onions and tomato. Drizzle as much of the pepper sauce on top as you want and enjoy!
