Grilled Cornish Hens
Recipe
2 Whole hens (cut in half)
1 TBSP olive oil
1 TBSP rice vinegar
1 green onion
1 TBSP minced dried onion
1 TBSP dried basil
1/2 TBS dried oregano
1 TSP white pepper
1 TSP salt
Directions
Take the cornish hen and cut it open from the breast side down the middle so that you can lay it flat. In a food processor or blender blend together the olive oil, vinegar and 1 green onion. Place the hens on a baking tray and rub the olive oil, vinegar, green onion puree onto the hen. In a separate small mixing bowl mix together your dry rub. Dried onion, basil, oregano, white pepper, and salt. Then rub your seasonings onto the hen coating it entirely. Let that sit while you get your grill hot. I have a 4 burner gas grill and I usually cook poultry for about 1 1/2- 2 hours over indirect heat. Turn the two far left flames on high heat and turn the two burners closest to the hens off keeping the lid closed. It will thoroughly cook and be juicy and tender. Don't leave your grill alone for the entire time you will want to check the hens from time to time to make sure it's cooking right. All grills are different so just keep an eye on them. Once they are nice and brown and the rub had crusted they are done and ready to enjoy.
