Roasted Garlic Wasabi Mashed Potatoes
RECIPE
2 LBS russet potatoes (skinned)
6 cloves garlic
1 stick butter
1 cup whole milk
2 1/2 TSP wasabi paste
1 TSP salt
1/2 TSP white pepper
1 green onion
DIRECTIONS
Start by preheating your oven to 350 degrees to roast the garlic. Spread garlic cloves on a cookie sheet unpeeled and drizzle with a little olive oil let it bake for 10-15 mins or until the garlic is soft. In a large pot boil the skinned potatoes for 45 minutes or until soft. In a blender or food processor puree together the whole milk, roasted garlic, and wasabi paste until smooth. Once the potatoes are done boiling drain them and pour them back into the pot adding in 1 stick of butter. Use a potato masher or hand mixer to mix the potato and butter. Then add in the garlic, wasabi, and milk mixture along with 1 teaspoon salt and 1/2 teaspoon white pepper. Mix the potatoes until smooth. Top with chopped green onion.
