Grilled Lobster Roll
Makes 4 rolls
4 tablespoons butter (1/2 stick)
6 garlic cloves, minced
1/4 teaspoon red chili flakes
Pinch sea salt
1 lemon
Four 3-ounce lobster tails, in shell and butterflied
4 hot dog buns
Handful parsley, chopped
Preheat grill to high.
Place cast iron skillet on grill. Add butter, garlic, chili flakes, and salt. Cook until butter is melted and the mixture becomes a saucey consistency, 6 minutes.
Meanwhile, squeeze juice from half the lemon over the lobster meat. Place the tails shell-side down onto the grill and cook 3 minutes. Then take each tail and dip the meat side into the butter sauce. Transfer the tails back to the grill and cook an additional 3 minutes meat-side down. Place hot dogs buns on the top rack, warming while the lobster cooks. Pull tails from the grill and when cool enough to handle, remove the meat from the shells, leaving the tails whole.
Start assembling your rolls. In the bottom of each bun, spread a little of the cooked garlic from the butter sauce. Then place one tail in each bun. Drizzle with plenty of butter sauce and garnish with chopped parsley. Serve with remaining lemon cut into wedges, if desired.
