Picante Turkey Taquitos
Recipe
1/2 LB ground turkey
2 hot Italian turkey sausages (remove from casing)
6 cloves garlic (crushed)
2 green onions (chopped)
1/2 jalapeno pepper
1/2 lime
2 TSP chili powder
1/4 TSP cumin
1/4 TSP salt
20 slices of pepper jack cheese
Cotija cheese (for topping)
20 yellow corn tortillas
3 cups vegetable oil (for frying)
Directions
In a medium sized pan begin cooking the ground turkey and sausage meat on medium heat. Using a garlic crusher start crushing the cloves of garlic directly into the pot while the turkey is cooking. Also add in the chopped jalapenos, green onions, chili powder, cumin, and salt. Let the turkey finish cooking and then remove from heat. Squeeze fresh lime juice over the cooked turkey and let sit. Heat up your oven on 375 degrees and place the corn tortillas on a baking sheet. Bake the tortillas for about 1-2 minutes so they are pliable. Remove the tortillas from the oven and place in between paper towel so the tortillas don't dry out. Begin filling the tortillas with a slice of pepper jack cheese then about a tablespoon of ground turkey. Roll them up using toothpicks to keep them closed. Start heating up your oil to about 350 degrees in a frying pan. Once the oil is hot place the taquitos in the oil with the toothpicks still holding them together. Fry for about 2-3 minutes or until crispy and golden brown. Remove from oil and drain on paper towel. You can serve these cheesy meaty bad boys with salsa, guacamole, sour cream, extra jalapenos and cotija cheese. All the works! Enjoy!
